Ingredients: 3 eggs, 1½ cups milk, 1½ cups all-purpose flour, 1/2 teaspoon salt, 1/4 cup unsalted melted butter and 2/3 cups fresh, pitted cherries

Directions:

Pour milk, flour, salt and butter in a bowl and beat it until it turns in a smooth mixture.
Beat all the eggs, one at a time and stir in the pitted cherries.
Keep the batter aside to rest for 15 minutes. Take this time to pre-heat the oven to 450° F.
Grease the muffin tin properly and pour the batter to about 3/4th of the cup.
Greasing is necessary so the popover do not stick to the tin and 3/4th filling gives proper space for the popover to rise.
Now, bake this batter in the preheated oven for 20 minutes.
Lower the heat to 350° F and bake another 10 minutes.
You can see the popovers turning brown and puffed.
Remove it from the oven, allow it to cool off a little bit and serve while it is still warm.
